Happy St-Patty’s Day everyone!
Green was big in our family today. My husband being half Irish, I didn’t even have 5 minutes to change out of my bathrobe this morning. He was already turning my daughter against me, prompting her to catch and pinch me! LOL!
As vegetarians and an alcohol free family, it’s kinda hard to be real traditional with Irish meals. Si we decided instead to lean towards the green theme and try to make St-Patty’s Day dinner kid-friendly, easy and fun!
So I give you my Spinach-Walnut pesto! Of course, as with everything else that is traditionally garlic filled, I’ve tried my best to substitute and I think I did a pretty good job! My 3yo daughter asked me if we could eat this again tomorrow, so to me, that is a complete win.
Spinach-Walnut Pesto
2 cups baby spinach
1/4 cup walnuts
1/4 olive oil
juice of 1 small lemon (approx. 2 TBSP)
Salt and pepper to taste
Put everything in a blender and pulse until smooth.
That is it! I cooked some bow tie pasta and simply tossed the warm pasta with the pesto. This recipe makes about a cup. I needed 1/2 the pesto for dinner for 3, so I froze the other half for another time. For those of you who enjoy Parmesan, it can easily be added to the pasta after. I’m looking forward to trying this on potato gnocchi next time!

Yum!! Looks like our pesto, only we add the garlic, and a little nutritional yeast 🙂 We are a vegetarian, alcohol free family too…we really need to meet up one day.

Oh wow, this looks/sounds fantastic (and I don’t even celebrate SPD! haha) I’ll be trying this next week as soon as I get some spinach. I love seeing a pic of your beautiful children!! God has truly blessed.

Looks great. We make basil pesto with walnuts. When we make little pizzas, we use the pesto as the sauce, rather than a red sauce. YUM!

mmm… I’ve never tried walnuts with basil, but I have done cashew-basil though. We love pesto on our pizzas as well. We can’t really buy ready made sauces anymore (no garlic or onion in our family diet) so being inventive with pizzas is a must. Our 3yo is a big fan and we have to change it up.

Sodium is my poison. So I need to be careful about most foods that I don’t make from “scratch.” It really makes it easier to control if you make it all yourself, doesn’t it?
