Quiet and living on dinner rolls

I’ve been quiet this week, I know. And I honestly don’t have any other excuse than it’s been a really quiet week. So one inspired the other and words didn’t really come.

We’ve enjoyed evenings filled with crafts and walks under falling snow. Warm meals and holiday movies streamed from the computer to our TV.  Late nights have been spent crafting and moving along with Christmas presents and life has been simple and sweet.

And we’ve been eating a LOT of dinner rolls… LOL! I love making bread (even if it doesn’t always rise or bake the way I want it to) but this was the first recipe I’ve ever made that turned out exactly like the picture. I figured I would quickly share the recipe with you.

If you don’t know the blog Minimalist Baker, you need to. The most incredible recipes, always vegan, often gluten free and just delicious. We are yet to make a recipe from this site that hasn’t turned out exactly how it was portrayed.

The vegan dinner rolls were a huge hit here. The first time, we purposely made them bigger to use them for sandwich buns. They were so amazing we ate them all in 12 hours and made a second batch. I didn’t have enough vegan butter so I substituted for olive oil. Still amazing… The almond milk gives them such a lovely texture. Both times, they were made in under 90 minutes, kneading, rising and baking time included. Now my kids ask for them by name. And my daughter just LOVES helping me with rolling the dough.

    I love this sight. I made their vegan cinnamon rolls when I found out about the dairy intolerance and I haven’t stopped making them since. They are so yummy. So I would imagine that those rolls were awesome! 🙂

      Amen! It’s been lovely… Our advent calendar has been forcing us to stop and relax. All our family “experiences” have to happen in the evening because of dad working. So it’s been lovely. Like tonight : We are driving to a newer neighborhood in town, parking the car and then walking around to look at all the insane light displays! Then coming home to warm tubs and hot cocoa… It,s also my husband birthday, so after the kiddos are snuggled in, hubby and I are having a little more “refined” dinner with local apple-cranberry cider…

      They really are, sooo easy! She says in the recipe that we can sub up to 1/3 of the flour for whole wheat… I’m going to have to try that next! 🙂

      Warning : They are insanely addictive! LOL! Especially if you have a pantry filled with homemade jams and preserves. 🙂 My husband, leaning on the counter, stuffing his face with a fresh, hot roll filled with raspberry jam looked at me and said : “THIS is why we homestead!” I had to agree…
