Banana-Coconut pancakes – Gluten-Free & Vegan

In our home, pancakes are their own food group. We make them healthy, we make them decadent, we make them sweet, we make them savory… Anything works in form of a pancake! So when you have little ones that are under the weather and they won’t eat much, what do you do?

You make pancakes!!!!

We’ve been experimenting with gluten-free flours for a little while now, but most attempts have been for desserts. For pancakes, the one gluten-free alternative we always went for was buckwheat. Very little beats a nice buckwheat-blueberry pancake. This new pancake we’ve come up with might just be the only thing that does…

  • 1 ripe banana
  • 1 cup coconut milk
  • 1 tsp apple cider vinegar (ACV)
  • 1/2 tsp vanilla
  • 1 cup gluten-free flour mix (right now, I’m using Bob’s Red Mill, but I plan on trying to make my own using this recipe soon.)
  • 1/4 cup shredded unsweetened coconut
  • 2 TBSP hemp seeds
  • 1/2 tsp cinnamon
  • 2 TBSP coconut sugar or brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of sea salt
  • oil or fat for cooking (I use MyCryo powdered cocoa butter for pancakes.)

In a blender, reduce banana, coconut milk, ACV and vanilla into a thick cream and set aside. The ACV will make the mixture curdle, that is okay. In a large bowl, whisk together all the dry ingredients and combine with wet ingredients. Make pancakes.

*** Makes sure your pan is fully warmed. Putting the mixture on a cold pan will make the pancake stick. The sugar in the mix will make the outside of the pancake caramelize so don’t let it cook too long, it will burn. ***

We ate ours with organic honey, but maple syrup would do just fine. I’m even thinking vegan chocolate drizzle for a treat one morning soon.

      Pancakes are seriously my favorite food, only rivaled by sushi! I’ve snuck just about anything to my kids in pancake form. LOL! Which comes in handy with little man because unlike his sister, he is much pickier about his food. 🙂

  4. Oh ho ho! This is my kinda thang! I just made some mini pizzas using a GF flour blend I made from chickpea flour, almond meal, and flax meal. Yummy! Got the recipe from Wheat Belly Cookbook.

    Pancakes and Maple syrup – food of the gods! Blueberries mmmmmmmmmm. Went into a farm shop Monday and the sign read ‘are you ready for Pancake Day’? Im always ready for pancakes 😉

      You are the 2nd to mention pancake day… I didn’t know of such a thing, my kind of holiday! I may have to make pancakes all day. Savory lentil pancakes with Indian spice and grated root veggies is another favorite here! 🙂

        Its morphed into ‘Pancake Day’ but marks Shrove Tuesday and the start of Lent. Its the 17th of Feb this year if you need any excuse lol! I have had buckwheat pancakes in France…..Blueberry & Maple syrup in
        Vermont and sour cream and caviar in Norway…. but that was a language thing! 😉

        LOL! I bet the “language thing” is a great story! One of my favorite pancake is a simple potato pancake with Gruyere cheese and sour cream. I talked about it with my husband and he agrees, we should start observing Shrove Tuesday! 🙂 I guess it would be Mardi Gras in French.

        Glad you’re thinking of observing Shrove Tuesday/ Mardi Gras! In France, they also celebrate ‘La Chandeleur’ (2nd February) so they have TWO pancake days in quick succession. Our strategy is to do savoury pancakes for Chandeleur, and sweet for Mardi Gras!

        That would be Candlemas right? Kim from Mothering with Mindfulness had shared their tradition of making snow candles so we gave it a whirl. It was a lot of fun!

        I’m thinking sweet but healthy in the morning, potato pancakes for lunch and Indian spice lentil pancakes for dinner! May just have to make cucumber-mint raita! 🙂

  7. We’re into crepes and buckwheat ployes around here. Blueberries don’t grow in Colorado, so when I splurge and buy the ones from far away is an amazing treat. Maple syrup also costs an arm and a leg. Long way from my northern New England roots! In other words, you are making me hungry 😉 I’ve been using more coconut flour so I will certainly have to try these.

    Shrove Tuesday was traditionally started to use up all the luxurious items forbidden during Lent!

      I like it… Maybe observing lent this year would be a great way to push our vow of simplicity further. Hmmm… All of you are giving me a lot to talk about.

      I remember looking for maple syrup when I loved in California and just being floored by the prices. Could you grow blueberries in Colorado?

      • You can grow them, but it takes so much work and soil amendments that it never quite feels worth it. We tried with too bushes for two seasons, but eventually let it go for the berries that grow better here. Many summers we spend some time back east with my family, and then we cram in as much blueberry picking, pie, cobbler, muffin, ice cream, you name it, time!

  8. looks delicious! do they have a strong banana flawor? i’ve tried some gluten-free banana ones in the past and my kids would not eat them as they don’t like cooked bananas…

    Sounds so yummy! We have been making waffles every Saturday for a few months and after trying a new recipe each week- I’ve decided the gluten free bobs mill pancake mix, with a bit of tweaking was our absolute favorite. Do you know if you could make waffles with this? I’m a bit confused on if pancake and waffle mix are the same thing. Anyway, sounds wonderful and I hope your littles feel better quickly!

      You know, I’ve never made waffles, I have no clue! If you do try it please let me know. Funny enough, we got rid of many kitchen gadgets, but I keep telling my hubby that if we were to get one, it would be a waffle maker! 🙂

      The little ones are still sick. Nasty nasty cold that won’t let them be free. I am seeing progress today : No fevers! *fingers crossed*

    La Chandeleur is indeed Candlemas. I like your idea of pancakes for every meal! That hadn’t occurred to me!!

    La Chandeleur, autrefois “Chandeleuse”, se fête le 2 février, soit 40 jours après Noël. Son nom vient du mot “chandelle”.

    A l’origine, à l’époque des Romains, il s’agissait d’une fête en l’honneur du dieu Pan. Toute la nuit, les croyants parcouraient les rues de Rome en agitant des flambeaux. En 472, le pape Gélase 1er décide de christianiser cette fête qui deviendra la célébration de la présentation de Jésus au temple. On organise alors des processions aux chandelles le jour de la Chandeleur, selon une technique précise. Chaque croyant doit récupérer un cierge à l’église et le ramener chez lui en faisant bien attention à le garder allumé. Un dicton de Franche-Comté dit d’ailleurs :

    Celui qui la rapporte chez lui allumée
    Pour sûr ne mourra pas dans l’année

    Ce cierge béni est censé avoir d’autres pouvoirs. On dit que quelques gouttes de sa cire versée sur des œufs à couver en assurent une bonne éclosion. Et aussi que sa flamme protège de la foudre si on l’allume pendant l’orage.

    Entre temps, une autre tradition a vu le jour : celle des crêpes. Cette tradition se rapporte à un mythe lointain selon lequel si on ne faisait pas de crêpes le jour de la chandeleur, le blé serait carié pour l’année. On dit d’ailleurs :

    Si point ne veut de blé charbonneux
    Mange des crêpes à la Chandeleur

      You are welcome… We hide SO MUCH in pancakes! Try cooking 1/2 cup of red lentils and pureeing them with the milk. Adds tons of proteins and a really nice texture. 🙂
